The Big Fat Surprise

Nina Teicholz is the author of the best-selling book The Big Fat Surprise (2014). This is a groundbreaking book that challenges many of the established notions about nutrition, especially the demonization of saturated fat and its role in the diet.

Teicholz goes to great lengths to trace the origins of these beliefs, and she points out how poor scientific methods, political forces, and industrial interests have created a health disaster.

A central figure in the book is Ancel Keys, the man behind the so-called “diet-heart hypothesis.” Keys argued that saturated fat and cholesterol in food led to increased cholesterol in the blood, which in turn led to heart disease. This hypothesis became the basis for decades of dietary advice, despite the fact that it was largely based on weak research.

As saturated fat was singled out as the main enemy, the use of vegetable oils and trans fats increased dramatically. These were promoted as healthy alternatives, even though research has since shown that they can be far more harmful than saturated fats.

Teicholz describes how highly processed vegetable oils, with their high omega-6 fatty acid content, contribute to inflammation and potentially increase the risk of disease. At the same time, she emphasizes that trans fats, long a mainstay of processed foods, have had disastrous effects on health, especially in relation to heart disease.

The book also addresses the weaknesses in the scientific basis for many of today's dietary recommendations. According to Teicholz, these have often been based on epidemiological studies which only shows correlations, without proving causality.

She highlights that randomized controlled trials, which are the gold standard in science, often do not support the hypothesis that saturated fat is dangerous. Yet dietary advice has been maintained, driven by political and economic forces rather than solid science.

One of the book’s most provocative points is how the modern food industry has profited from this fallacy. Teicholz documents how the industry adapted by developing low-fat products that were instead full of sugar and refined carbohydrates, contributing to a global epidemic of obesity and lifestyle diseases. She argues that we need to return to a more natural diet, in which animal fats and proteins once again play a central role.

With this book, Teicholz challenges readers to reevaluate everything they think they know about fat and health. She asks an important question: Why would saturated fat, which has been a part of the human diet throughout history, suddenly be the cause of modern diseases? The answer, she argues, lies in modern food production and bad science.

The Big Fat Surprise is a wake-up call and an invitation to look at nutrition with a critical and open mind, free from old dogmas.
